It's that time of year when salads are a favorite dish at most meals, especially cookouts. Here is a favorite of mine. Very light and refreshing. Enjoy!
Salad Ingredients:
8 c. apples, chopped into bite-size chunks (use a tart apple, like Granny Smith)
20 oz. can pineapple chunks (drained, but reserve the juice)
2 c. grapes
Dressing:
¼ c. butter
¼ c. sugar
1 T. lemon juice
1 T. sugar
2 T. cornstarch
2 T. cold water
1 c. mayo
Directions:
Place salad ingredients in a large mixing bowl.
In a saucepan, combine, reserved pineapple juice, butter, sugar, lemon juice. Bring to a boil.
Add cornstarch and water. Stir constantly for two minutes.
Cool dressing, then pour over salad ingredients and toss to coat thoroughly
Chill for at least two hours
Optional: top with toasted peanuts before serving
