LEMON GARLIC SHRIMP & PASTA

Ingredients:

1-2 lbs. medium shrimp, crusty tails removed

4 T. olive oil

2 T. lemon (or lime) juice

2 T. minced garlic

1 t. salt

1 t. pepper

Cayenne pepper to taste

Pasta


Directions:

In a large skillet over low-to-medium heat, add oil, lemon juice, garlic, spices; stir to combine and heat through (but don’t boil)

Add shrimp, cook until done (about 3-4 minutes)

Meanwhile, cook pasta


When everything is cooked, combine the lemon garlic sauce/shrimp and pasta, toss to coat thoroughly

Sprinkle with Parmesan cheese and Parsley flakes

Serve with a salad and garlic toast
